This classic peach bellini recipe uses fresh peach purée and chilled Prosecco to make the perfect brunch cocktail.
I love a good Peach Bellini! They are a great alternative to mimosas for those of us who are not crazy about orange juice.
The bellini by first crafted by Giuseppe Cipriani, founder of Harry’s Bar in Venice, Italy. Marinating fresh peaches in wine is an Italian tradition, so creating a cocktail of pureed peaches & Italian sparkling wine was the perfect cocktail combination for this Italian mixologist.
Prosecco cocktails are noted for their crisp and effervescent qualities. They can also make you drunk faster if you’re not too careful. It’s because carbination helps to move the alcohol more quickly into the bloodstream. It gives new meaning to the term “Brunch Drunk.”
Mix up this recipe for some classic Peach Bellinis!
Classic Peach Bellini
Yields: 2 Serving
Ingredients You’ll Need:
- 2 Ounces Fresh Peach Purée
- 1 Tablespoon Fresh Squeezed Lemon Juice
- ½ Teaspoon Honey
- 12 Ounces Chilled Prosecco [or San Pellegrino for Mocktail Version]
- Peach Section for Garnish
Glassware and Items You’ll Need:
- Stemless Glass or Champagne Flute
To make the Peach Purée: Blend 2 medium sized peaches, that have been peeled and diced, with ½ cup of water. Leave in blender to create the rest of the bellini mixture.
Classic Peach Bellini Cocktail: In the blender, add lemon juice & honey to the peach purée, and blend until smooth. Fill a Stemless Glass or Champagne Flute a quater of the way full, and then top with chilled Prosecco, or sparking water. Garnish with a peach section. Enjoy!
