Drink of the week: Baileys Iced Chai

Masala chai is a mixed-spiced tea that originated from India. This tea is made from strong black tea leaves that are infused with traditional Indian herbs and spices, like green cardamom pods, cinnamon sticks, ground cloves, ground ginger, and black peppercorn. These spices give chai its warming feeling, which might sound odd since it is drunk throughout the year. Despite its spiciness, Masala Chai makes a great iced summer drink and makes for one great iced tea cocktail when doctored up a bit.

Chai is one of the most popular teas worldwide, and people have an absolute love affair with it. The Decimal Brothers made a hilarious video called When you drop your Chai… to illuminate the deep sorrow of spilling a cup of chai. The struggle is real my friends. There is also something really satisfying about watching the milk seep into the tea.

Drink of the week: Baileys Iced Chai

Chai can be made from tea bags, chai concentrates, or even powdered chai. In many places around the globe, this milky tea is brewed directly in milk instead of water. Typically, people use Condensed milk, white or brown sugar, honey, or syrups to add a bit of sweetness when they make chai, so we opted to use our recipe for simple syrup. The level of sweetness is also subjective to the drinker, so add as much as you need to.

Cold or Iced Chai has grown in popularity here in the States. You can find hot or iced Chai lattes in pretty much every major Coffee House and Tea chain in America. Fun fact: The word “Chai” actually translates to “Tea”, so when you order a Chai Tea Latte you are literally saying to your barista, “I’d like a large Hot/Iced Tea Tea Latte, please.” Are you ready to brew up some delicious Baileys Iced Chai iced tea cocktails? Then let’s get started.

Iced Tea Cocktail Series


Baileys Iced Chai

Yields: 1 Serving
Ingredients You’ll Need:

  • 2 Ounces Baileys® Original Irish Cream Liqueur
  • 6 Ounces Chilled Masala Chai
  • ½ Ounce Spiced Rum
  • ½ Ounce Simple Syrup [Optional]
  • Star Anise for Garnish
Glassware and Items You’ll Need:

  • Tall Glass
  • Water Kettle
  • Tea Pot/Heat Proof Container
  • Bar Spoon
  • Cocktail Shaker**



Masala Chai: Fill a kettle with 6 Ounces of water and bring it to a boil. Take kettle off the heat and pour water into a tea pot, or heat proof container, with about 1 to 2 Chai bags, we used rishi Masala Chai. Steep tea until the water cools down. Remove the tea bags, and set aside in fridge to chill.


Baileys Iced Chai: Fill a tall glass with ice. Pour chilled Masala Chai into glass and add in spiced rum and sweetner if desired. Top with Baileys Irish Cream, and stir together with a bar spoon.

For a Neat Drink: Fill a cocktail shaker with ice, Baileys, chilled Chai, Spiced Rum, and sweetener if desired. Shake vigorously and let settle. Use a strainer as you pour the Baileys Iced Chai into glasses.

Go All Out: Pour all Baileys Iced Chai ingredients into a blender with 2 to 3 cups of ice. Blend together until smooth. Pour your frozen Baileys Iced Chai into glasses and top with whipped cream and this chocolate chai syrup.
