This year’s NC Azalea Festival is right around the corner, which means we’ve been hard at work coming up with some cocktails for Azalea Fest. Today’s star cocktail is a pomegranate mojito that is as pretty as an Azalea Belle.

Pomegranates are a classic Winter season fruit, but did you know pomegranates have a Spring season too? While the Californian pomegranate season ends in February, down in the Southern Hemisphere Pomegranate season just got started.

Which means you can enjoy these pomegranate mojitos practically all year round! But we don’t really need a reason to experiment with mojitos, now do we?

Rum cocktails are pretty popular, after all there are dozens of cocktail recipes that use rum. These cocktails often invoke the flavors of tropical islands or the pirate days of yore, but this Pomegranate Mojito is a little different.

This mojito recipe uses pomegranate seeds to infuse the cocktail with a whole lot of pomegranate flavor, which adds something extra to the citrus kick you expect from a mojito. You can play around with the sweetness of this cocktail as well. Like it a little sweet? Stick to one ounce of simple syrup. Like it super sweet? Go for two ounces, but be careful or all that sweetness could leave you with a nasty hangover.

Mojitos are typically a messy cocktail. It’s why many bartenders absolutely hate making them. You can literally type the words “Bartenders Hate” in Google and Mojitos will pop up in the top 5 searches. Do it, it’s kind of funny.

While this delicious combination of rum and muddled mint, sugar [or simple syrup], and lime juice might be the bane of your bartender’s existence, the outcome is loved by many, and is easy to make at home.

This is how you make a Pomegranate Mojito!

Pomegranate Mojito

Yields: 1 Serving
Ingredients You’ll Need:

  • 3 Ounces White Rum
  • 2 Ounces Simple Syrup
  • 1 Ounce Fresh Lime Juice
  • ¼ Cup Pomegranate Seeds
  • 2 to 5 Fresh Fresh Mint Leaves
  • Soda Water [We recommend San Pellegrino]
  • Lime Wedge for Garnish
  • Mint Sprigs for Garnish
Glassware and Items You’ll Need:

  • Highball Glass
  • Muddler or Bar Spoon

 

Preparation

Pomegranate Mojito: At the bottom of a highball glass, muddle a couple of mint leaves, about 2 tablesoons of the pomegranate seeds, lime juice, and simple syrup together with a Muddler or a long spoon.

Pour white rum overtop, and add ice. Top with soda water, like San Pellegrino, and stir. Garnish with lime, mint, and a few more pomegranate seeds. Enjoy!

Mojitos. This Cuban delight owes it’s popularity much to -believe it or not- the Prohibition era when Americans set their sights on Havana’s beachy nightclubs to satisfy the need for a Night Cap. Here is where the Mojito became the sophisticated little concoction they are today.

Before this, mojitos were made by Cuban farmers from barely palatable rum that required sugar, lime, and mint just to mask the taste. In Havana, the mojito got dressed up in a tall glass with ice and carbonated water to wow American vacation goers and rum smugglers alike.

They are some of the most popular cocktails ordered at bars, and your bartender might hate you a little bit for asking for one. The Reason? This delicious Cuban drink is a bit time-consuming to make and can have a messy cleanup.

We put together this version of a classic mint mojito using El Dorado White Rum, fresh mint, freshly squeezed lime juice, San Pellegrino Sparkling Water [because it’s fancier than regular club soda] and our homemade simple syrup.

Go ahead and venture from this recipe if you like and add more lime juice, syrup, or mint for added flavor. Customizing your drink to taste is key.

 

Classic Mint Mojito

Yields: 2 Servings

Ingredients You’ll Need:

  • 2 Ounces White Rum
  • 1 Ounce Lime Juice
  • 2 Ounces San Pellegrino Sparkling Water
  • 1 Ounce Simple Syrup
  • 20 Sprigs Fresh Mint
Glassware and Items You’ll Need:

  • Highball Glass
  • Cocktail Shaker w/Strainer
  • Spoon or Muddler

 

Preparation

Classic Mint Mojito: At the bottom of a glass, gently muddle about 8 mint leaves and simple syrup together with a muddler or long spoon. Add ice to glass. Next, add lime juice, white rum, and ice into a cocktail shaker. Shake well, then strain over ice. Top with San Pellegrino sparkling water [or club soda]. Garnish with mint sprig, cheers!
