Drink of the week: Tom's Carolina Cousin

Our NC Beer Month Cocktail Series comes to a close with this Drink of the Week

Let’s finish off our NC Beer Month Cocktail Series, by putting a Carolina twist on a classic Drink of the Week cocktail. Tom’s Carolina Cousin, spun old Tom Collins on his head by introducing it to North Carolina brewed IPA.

From our treasure trove of North Carolina breweries, we selected Foothills Brewing Jade IPA, for its citrusy notes that added a little something to this cocktail. You can substitute your favorite North Carolina IPA for Jade IPA if you so desire*.

Tom’s Carolina Cousin

Yields: 1 Serving

Ingredients You’ll Need:

  • 1½ Ounces Old Tom Gin
  • 2 Ounces Foothills Jade IPA*
  • ½ Ounce Cherry Liquor
  • ½ Ounce Lemon Juice
  • ½ Ounce Simple Syrup
  • Lemon Wheel for Garnish

Glassware and Items You’ll Need:

  • Highball Glass
  • Cocktail Shaker



Fill a cocktail shaker with ice. Add Gin, Cherry Liquor, Lemon Juice, and simple syrup. Give it a couple good shakes, and strain it into a highball class over ice, or not if you prefer to drink your gin cocktails Neat. Top cocktail off with beer and garnish with lemon wheel. Enjoy!
