The Tale of A Bartender’s Delicious Mistake

I have a bit of a confession to make to make to you Brio Readers. Until last night, I have never tried a vodka Collins. That was until last night at dinner when the bartender used Gordon’s vodka in my Tom Collins instead of Gordon’s gin. Oh, the scandal of it all!

I know, I know! I’m more of a gin in my Collins kind of girl. I will add a little caveat that she forgot to use simple syrup in the drink, which made the cocktail a bit more tart than I was expecting, but still sippable. Anyways, I liked it. Let’s just say my cocktail horizons were opened just little a bit.

So when I got home, I looked up a recipe for a Vodka Collins and came across this delicious little number called a Hemsley Collins on Pinterest. Wondering how it tasted, I opened up the liquor cabinet and got to mixing.

Unlike a regular vodka Collins, a Hemsley Collins uses raw honey in exchange for granulated sugar or simple syrup. It does still have that tart bite you come to expect from Collins drinks, but it’s not too strong. You can also up the honey if you like it a little sweeter. I added another tablespoon of organic honey after a little taste test. For this cocktail, I used San Pellegrino Sparkling Water [because yes I have a case of it I need to use up] and Gordon’s Vodka, as it’s what the bartender was using and it wasn’t hard to find at the local ABC store.

The Hemsley Collins is a refreshingly light and tart take on the Vodka Collins, and might just be a new addition to my night out cocktail list. Sometimes your bartender’s mix up can be one wonderful experience.


Hemsley Collins

Yields: 2 Serving

Ingredients You’ll Need:

  • 1.7 Ounces Vodka
  • 1½ Ounces Lemon Juice
  • 2 Ounces Raw Honey
  • 5 Ounces San Pellegrino Sparkling Water
  • Mint & Lemon Slices for Garnish

Glassware and Items You’ll Need:

  • Collins Glass
  • Cocktail Shaker
  • Bar Spoon



Hemsley Collins: In a cocktail shaker, add vodka, lemon juice, and honey. Shake well, and pour into ice-filled Collins glasses. Top with San Pellegrino. Add a few slices of lemon and stir. Garnish with mint. Enjoy!
